I remember it being about an Appaloosa horse and it had really strong mythic elements to it, oh, and it had a beautifully illustrated front cover. One which stands out to me is Piper At The Gates Of Dawn by Mary Stanton, on a par with Watership Down as animal fiction. Did you ever have the pleasure of reading it? I just looked on Amazon but it's rare as hen's teeth now.
